  • 1 pound fresh or frozen octopus
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 4 cups mixed greens (arugula and spinach)
  • 1/4 cup toasted pine nuts

Instructions

  1. Rinse the octopus under cold water and thaw if frozen.
  2. In a bowl, mix olive oil, lemon juice, garlic, salt, and pepper. Add the octopus and marinate for at least one hour.
  3. Preheat grill to medium-high heat (400°F). Grill the octopus for 3-4 minutes per side until charred.
  4. Let the grilled octopus rest before slicing into bite-sized pieces.
  5. In a serving bowl, layer mixed greens, top with sliced octopus, sprinkle herbs and pine nuts.
  6. Drizzle leftover marinade over the salad and serve warm.
