  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup fresh parsley, chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp olive oil (for frying)
  • 4 small pita bread rounds
  • 1/2 cup tahini sauce
  • 1 cup mixed fresh vegetables (lettuce, tomatoes, cucumbers)

Instructions

  1. In a food processor, combine chickpeas, parsley, garlic, cumin, coriander, salt, and pepper. Pulse until slightly chunky.
  2. Shape the mixture into golf ball-sized falafel balls.
  3. Heat olive oil in a large skillet over medium heat. Fry the falafel balls until golden brown on all sides (about 3 minutes per side).
  4. Warm pita bread slightly. Fill each with falafel balls and top with fresh vegetables and tahini sauce.
  5. Serve immediately and enjoy!
