- 2 tablespoons vegetable oil

- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 cups vegetable broth or water
- Fresh cilantro for garnish
Instructions
- Rinse basmati rice under cold water until clear; soak for 30 minutes.
- In a large pot over medium heat, add oil and sauté the sliced onion until golden brown (about 8 minutes). Add garlic and ginger; sauté until fragrant.
- Stir in chopped mushrooms and cook until tender (about 5 minutes).
- Add cumin seeds, coriander powder, turmeric powder, and garam masala; mix well.
- Drain soaked rice and add to the pot with vegetable broth or water. Bring to a boil, then reduce heat to simmer. Cover and cook for 15-20 minutes until liquid is absorbed.
- Turn off heat, let sit covered for another 5 minutes. Fluff with a fork and garnish with fresh cilantro before serving.
