  • 3 tbsp rice vinegar
  • 4 sheets nori (seaweed)
  • 8 oz sashimi-grade fish (tuna or salmon)
  • 1 medium cucumber, sliced into matchsticks
  • 1 ripe avocado, thinly sliced
  • 3 tbsp low-sodium soy sauce
  • Wasabi to taste

Instructions

  1. Prepare the sushi rice: Rinse the rice under cold water until clear, then cook according to package instructions. Once cooked, let it cool slightly before mixing in rice vinegar.
  2. Slice your fillings: While the rice cools, thinly slice the fish and chop cucumbers and avocado into matchsticks.
  3. Assemble the sushi: Lay a nori sheet on a bamboo mat. Wet your hands and spread an even layer of rice over three-quarters of the nori.
  4. Add fillings: Place fish, cucumber, and avocado along the center of the rice-covered nori.
  5. Roll it up: Start rolling from the edge closest to you, using the bamboo mat for guidance. Wet the exposed nori edge to seal.
  6. Slice and serve: Cut roll into bite-sized pieces with a sharp knife dipped in water. Serve with soy sauce and wasabi.
