  • 1/4 cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 1/2 cup vegetable broth
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 2 garlic cloves, minced
  • 1 tbsp sesame oil

Instructions

  1. Chop the bell pepper and broccoli into bite-sized pieces.
  2. Boil water in a large pot; add rice noodles and cook according to package instructions until just tender. Drain and set aside.
  3. In the same pot, heat sesame oil over medium-high heat; sauté bell peppers and broccoli for about 4-5 minutes until vibrant and tender-crisp.
