- 4 large eggs (room temperature)
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 1/2 cup heavy cream
- 1/4 cup coffee liqueur (or brewed coffee)
- 1 cup powdered sugar
- 6 oz dark chocolate (at least 60% cocoa)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, beat eggs and granulated sugar until pale and fluffy (about 5 minutes). Gently fold in almond flour until combined.
- Divide the batter evenly between the prepared baking sheets and bake for 15-18 minutes until golden brown. Allow to cool completely.
- Meanwhile, heat heavy cream in a saucepan until steaming but not boiling. Pour over chopped dark chocolate and let sit for 3 minutes before stirring until smooth.
- Beat softened butter until creamy. Gradually add powdered sugar and mix in coffee liqueur until fluffy.
- To assemble, layer one sponge on a platter, brush with coffee liqueur syrup, spread half the ganache, followed by half the buttercream. Repeat with remaining layers and chill before cutting into heart shapes.
