Ingredients
- 2 pounds rib or loin lamb chops
- 1 cup pomegranate juice (100% pure)
- 2 tablespoons honey
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- Salt and pepper to taste
Instructions
- Prepare the marinade by whisking together pomegranate juice, honey, minced garlic, chopped rosemary, salt, and pepper in a mixing bowl.
- Place the lamb chops in a resealable bag and pour half of the marinade over them. Seal the bag and marinate in the refrigerator for at least one hour (overnight is best).
- Preheat your grill to medium-high heat (about 400°F).
- Remove lamb from marinade and discard any leftover marinade. Grill the chops for about 4-5 minutes on each side for medium-rare doneness.
- In the last minute of cooking, brush reserved marinade on top to create a glaze.
- Once cooked to your desired doneness, transfer the chops to a plate and drizzle remaining glaze over them before serving.
