Instructions
- Preheat oven to 450°F (232°C).
- Generously season the prime rib with salt and pepper.
- Rub minced garlic and rosemary all over the roast.
- Sear the roast in a hot skillet for 3 minutes on each side until golden brown.
- Place in a roasting pan, fat side up, and roast at 450°F for 20 minutes, then reduce to 325°F (163°C) until internal temperature reaches 130°F (54°C) for medium-rare (about an hour).
- While resting, make au jus by heating beef broth and red wine in the roasting pan, scraping up bits from the bottom.
