  • 1 thin store-bought flatbread
  • 1 cup fresh sugar pumpkin, diced
  • 4 oz burrata cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 6 fresh sage leaves

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss diced pumpkin with olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
  3. Transfer the flatbread to another baking sheet. Layer with roasted pumpkin and tear burrata over the top.
  4. Sprinkle sage leaves on top and drizzle with additional olive oil.
  5. Bake for 10-15 minutes until heated through and slightly golden.
  6. Drizzle honey over the warm flatbread, slice, and serve hot.
