- 1 cup canned pumpkin puree
- 4 oz burrata cheese
- 1/2 cup grated parmesan cheese
- 1 tsp fresh black pepper, cracked
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup heavy cream
- Salt, to taste
Instructions
- Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt butter and sauté minced garlic until fragrant.
- Stir in pumpkin puree and heavy cream, mixing until smooth. Season with salt and freshly cracked black pepper.
- Add drained pasta to the sauce along with reserved pasta water. Toss until well combined.
- For baked ziti: Layer half of the cooked ziti with burrata and parmesan in a baking dish, then top with remaining ziti and more cheese.
- Preheat oven to 375°F (190°C). Bake for 25–30 minutes until bubbly and golden.
