  • 1/2 cup canned pumpkin puree
  • 1/4 cup mayonnaise
  • 1 tbsp curry powder
  • 1/2 tsp ground cumin

Instructions

  1. Boil the eggs in a pot of water. Once boiling, cover and remove from heat. Let sit for 12 minutes, then transfer to an ice bath.
  2. Once cooled, peel the eggs under running water. Cut in half lengthwise and scoop yolks into a mixing bowl.
  3. Mix yolks with pumpkin puree, mayonnaise, curry powder, cumin, salt, and pepper until smooth.
  4. Taste and adjust seasonings as needed.
  5. Fill each egg white half with the mixture using a spoon or piping bag.
  6. Garnish with chopped cilantro before serving.
