  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup cream cheese, softened
  • 2 fresh jalapenos, roasted and chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Place whole jalapenos on a baking sheet and roast for 15-20 minutes until blistered. Let cool, then chop.
  2. In a bowl, combine cream cheese and shredded sharp cheddar. Fold in the roasted jalapenos.
  3. Spread the cheese mixture generously on one side of each slice of bread.
  4. Heat a skillet over medium heat and spread butter on the outer sides of the bread. Place the sandwich in the skillet, butter-side down.
