  • 1/4 cup pure honey
  • 3 cloves fresh garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp olive oil
  • 1 bell pepper, sliced (any color)
  • 1 medium zucchini, sliced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper and lightly spray with nonstick cooking spray.
  3. In a bowl, whisk together honey, minced garlic, and soy sauce.
  4. Place salmon fillets on one side of the baking sheet; arrange sliced bell peppers and zucchini on the other side. Drizzle half of the glaze over the salmon.
