- 1 lb shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, bell peppers)
- 2 cloves garlic, minced
- 2 green onions, chopped
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil
- 1 tbsp vegetable oil
Instructions
- Prepare all ingredients: diced vegetables, shrimp, garlic, and rice.
- Heat vegetable oil in a large wok over medium-high heat. Add garlic and sauté for about 30 seconds until fragrant.
- Add shrimp and cook until pink and opaque, approximately 3 minutes. Remove from pan.
- Add mixed vegetables to the wok and stir-fry for about 2 minutes until tender-crisp.
- Add cooked rice to the vegetables along with soy sauce and sesame oil; mix well and fry together for about 5 minutes.
- Return shrimp to the pan with chopped green onions; stir everything together for an additional 2 minutes before serving.
