- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup brown rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 can (10.5 oz) low-fat cream of chicken soup
- 1 cup low-sodium chicken broth
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
- Cut chicken breasts into bite-sized pieces and season with salt, pepper, garlic powder, and thyme.
- Cook brown rice according to package instructions until fluffy.
- In a large bowl, combine cooked chicken, rice, mixed vegetables, cream of chicken soup, and chicken broth. Mix until well coated.
- Transfer the mixture to the prepared baking dish. Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until bubbly and golden.
