  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup diced apples (Granny Smith or Honeycrisp)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together oats, flour, brown sugar, cinnamon, baking powder, and salt.
  3. In another bowl, whisk the eggs and vanilla extract. Combine the wet ingredients with the dry mixture and fold in the diced apples until well combined.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool for ten minutes before slicing into squares or rectangles.
