- 1 can (12 oz) Spam
- 2 cups sushi rice
- 1/3 cup teriyaki sauce
- 4 sheets nori (seaweed)
- 2 green onions, chopped
- 2 tbsp low-sodium soy sauce
- 1 tbsp brown sugar
Instructions
- Rinse the sushi rice under cold water until clear, then cook according to package instructions.
- In a small saucepan over medium heat, combine soy sauce and brown sugar, stirring until the sugar dissolves.
- Slice Spam into half-inch rectangles and fry in a nonstick pan over medium heat until golden brown on both sides.
- Pour teriyaki sauce over the cooked Spam and simmer for a couple of minutes until glazed.
- On a clean surface or sushi mat, lay one nori sheet shiny side down, place a scoop of rice in the center, and press down. Add a slice of glazed Spam on top, another layer of rice, then fold up the nori edges tightly.
- Cut each musubi into bite-sized pieces and serve warm or pack for lunch.
