  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon bits
  • 1/2 cup sour cream
  • 2 tablespoons butter
  • 2 green onions, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes under running water.
  2. Bake the potatoes directly on the oven rack for 45-60 minutes until tender.
  3. Let cool slightly, then cut each potato in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mash the potato flesh with butter, sour cream, cheddar cheese, and bacon bits. Season with salt and pepper to taste.
