  • 5 lb Prime Rib Roast
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 4 Large Eggs
  • 1 cup All-Purpose Flour
  • 1 cup Whole Milk
  • 1/4 cup Beef Drippings or Oil

Instructions

  1. Preheat the oven to 450°F (230°C). Season the prime rib with salt, pepper, and garlic powder. Let sit at room temperature for one hour.
  2. Place the roast on a rack in a baking pan and roast for 20 minutes. Reduce heat to 325°F (165°C) and cook until medium-rare (about an hour).
  3. While the roast cooks, whisk together eggs, flour, milk, and a pinch of salt in a bowl until smooth. Allow the batter to rest.
  4. After removing the roast from the oven, increase the temperature to 425°F (220°C). Pour drippings into muffin tins and heat until sizzling.
  5. Quickly pour batter into each tin over hot drippings, filling halfway. Bake for 20-25 minutes until puffed and golden.
  6. Serve sliced prime rib with Yorkshire puddings on the side. Drizzle with gravy if desired.
