- 4 medium flour tortillas

Instructions
- Gently rinse zucchini blossoms under cold water and pat dry. Remove the stamen from each blossom.
- In a bowl, mix chopped zucchini blossoms with cheese and herbs. Season lightly with salt and pepper.
- Place one tortilla on a flat surface and add a generous portion of the filling on half of the tortilla. Fold it over like a taco.
- Heat olive oil in a skillet over medium heat. Cook the quesadilla for about 3 minutes until golden brown, then flip and cook for another 2 minutes until crispy and cheese is melted.
