Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Bring 2 cups of water to a boil in a medium pot. Stir in the couscous, cover, and remove from heat. Let sit for 5 minutes.
  2. While the couscous cooks, chop the cherry tomatoes and cucumber.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Fluff the couscous with a fork and mix in the chopped parsley, tomatoes, and cucumber.
  5. Pour the dressing over the mixture and toss gently until well combined.
  6. Chill in the fridge for 20 minutes before serving for optimal flavor.
