- 2 cups rotini pasta (uncooked)
- 1 can (5 oz) tuna in water, drained and flaked
- 1 cup sweet corn (fresh or frozen)
- ½ cup mayonnaise
- ¼ cup Greek yogurt
- ¼ cup red onion, finely chopped
- ½ cup bell peppers, diced
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
- While the pasta cooks, prepare the vegetables: chop red onion and bell peppers. If using fresh sweet corn, blanch it in boiling water for 2 minutes and cool.
- In a large bowl, mix together flaked tuna, cooked pasta, chopped vegetables, sweet corn, mayonnaise, Greek yogurt, and lemon juice.
- Season with salt and pepper to taste. Optionally add dried herbs like dill for extra flavor.
- Cover and chill in the refrigerator for at least 30 minutes before serving.
