  • 2 cups rotini pasta (uncooked)
  • 1 can (5 oz) tuna in water, drained and flaked
  • 1 cup sweet corn (fresh or frozen)
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • ¼ cup red onion, finely chopped
  • ½ cup bell peppers, diced
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare the vegetables: chop red onion and bell peppers. If using fresh sweet corn, blanch it in boiling water for 2 minutes and cool.
  3. In a large bowl, mix together flaked tuna, cooked pasta, chopped vegetables, sweet corn, mayonnaise, Greek yogurt, and lemon juice.
  4. Season with salt and pepper to taste. Optionally add dried herbs like dill for extra flavor.
  5. Cover and chill in the refrigerator for at least 30 minutes before serving.
