Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup full-fat coconut milk
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Cut the watermelon into cubes and blend until smooth.
  2. In a separate bowl, whisk together coconut milk, honey (or maple syrup), and lime juice.
  3. Pour half of the watermelon puree into popsicle molds.
  4. Layer with the coconut mixture, then top with the remaining watermelon puree.
  5. Insert sticks and freeze for at least 4 hours until solid.
  6. To release pops, run warm water over the outside of the molds.
