- 3 lbs beef chuck roast
- 4 dried guajillo peppers
- 4 dried ancho peppers
- 6 cloves fresh garlic
- 1 large onion
- 4 cups low-sodium chicken broth
- 1 tsp cumin
- 1 tsp Mexican oregano
Instructions
- Trim excess fat from the beef chuck roast and cut into chunks. Soak dried peppers in warm water for 15-20 minutes.
- Blend soaked guajillo and ancho peppers, garlic, onion, cumin, oregano, and 2 cups of chicken broth until smooth.
- In a large pot, heat oil and brown the beef on all sides for about 5 minutes per side.
- Pour the blended marinade over the meat, add enough chicken broth to cover by an inch, bring to a boil, then reduce heat and simmer for about 3 hours until tender.
- Shred the meat with forks once cooked. Warm corn tortillas and fill them with shredded beef, briefly dipping them in the sauce before folding.
- Serve with chopped onions, cilantro, lime wedges, and additional sauce.
