  • 1 small red onion, finely chopped
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes

Instructions

  1. If using whole cobs, grill or boil the corn until tender. Once cool, cut the kernels off the cob into a mixing bowl.
