  • 1 cup medium-ground cornmeal
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup whole milk
  • 2 large eggs (room temperature)
  • 1/4 cup unsalted butter (melted)
  • 2 fresh jalapeños (diced and de-seeded)

Instructions

  3. In another bowl, mix the milk, melted butter, and eggs until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold in the diced jalapeños until just incorporated.
  5. Pour the batter into the prepared dish and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
