- 2 medium carrots, grated
- 1 bell pepper, diced (any color)
- ½ cup ketchup or tomato sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse lentils and combine with vegetable broth in a saucepan. Bring to a boil and simmer for 20-25 minutes until tender.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant (about 5 minutes). Add grated carrots and diced bell pepper; cook for another 5 minutes.
- In a large bowl, mix cooked lentils (drained), sautéed veggies, rolled oats, salt, pepper, and any herbs you prefer until well combined.
- Preheat oven to 350°F (175°C). Transfer mixture to a greased loaf pan and top with ketchup.
- Bake for 45-50 minutes until firm and golden brown on top. Let cool slightly before slicing.
