- 1 medium delicata squash
- 4 cups chopped romaine lettuce
- ½ cup grated Parmesan cheese
- ½ cup Caesar dressing
- 2 tbsp olive oil (for roasting squash)
- 1 tsp garlic powder
- 3 cups stale French or Italian bread, cut into cubes
- Olive oil (for croutons)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Slice delicata squash lengthwise, scoop out seeds, and cut into half-moon shapes. Toss with olive oil, salt, pepper, and garlic powder on the baking sheet.
- Roast the squash for about 20 minutes until golden brown and tender, flipping halfway through.
- While the squash roasts, toss bread cubes in olive oil and seasonings. Add them to another baking sheet during the last five minutes of roasting.
- In a large bowl, mix chopped romaine lettuce, roasted delicata squash, croutons, and grated Parmesan cheese. Drizzle with Caesar dressing before serving.
