Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup apple peeled and diced
  • 1/2 cup walnuts chopped

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, cream together the brown sugar, granulated sugar, and butter until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the diced apple and walnuts.
Baking
  1. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
