  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg freshly grated
  • 1/2 cup unsalted butter melted and slightly cooled
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 2 large eggs room temperature
  • 1/2 cup plain Greek yogurt or sour cream room temperature

Method

Step-by-Step Walkthrough
  1. Make the Streusel: In a medium bowl, whisk together flour, brown sugar, rolled oats, and cinnamon. Add cold cubed butter. Work the butter into dry ingredients with a pastry blender or your fingers until coarse, pea-sized crumbs form. Place streusel in refrigerator to stay cold while preparing batter.
  2. Preheat Oven & Prep Tin: Preheat oven to 425°F (220°C). Line a 12-cup muffin tin with tulip paper liners or spray with nonstick baking spray.
  3. Whisk Dry Ingredients: In a large bowl, whisk together 2.5 cups flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Whisk Wet Ingredients: In a separate medium bowl, whisk together melted butter, granulated sugar, and brown sugar until glossy. Whisk in eggs one at a time, followed by Greek yogurt, whole milk, and vanilla extract until smooth and creamy.
  5. Fold Batter & Apples: Pour wet ingredients into dry ingredients. Using a rubber spatula, fold gently just until mostly combined with a few flour streaks remaining (do not overmix!). Toss diced apples with 1 tablespoon flour to prevent sinking, then fold into batter.
  6. Fill Liners & Top Generously: Divide batter among the 12 muffin cups, filling them all the way to the top. Generously heap chilled streusel crumble over each muffin dome, pressing down very lightly so it adheres.
  7. The Bakery-Style Bake: Bake at 425°F (220°C) for 5 minutes, then without opening the oven door, reduce heat to 350°F (177°C) and bake for an additional 15-17 minutes until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.
  8. Glaze & Serve: Whisk powdered sugar, milk, and vanilla in a small bowl until smooth. Drizzle over warm muffin tops and serve immediately!
