Ingredients
  

Kofta
  • 1 lb ground beef preferably 80/20 for flavor
  • 1 small onion finely grated
  • 2 cloves garlic minced
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley chopped
  • 1 tbsp olive oil for grilling
Mint Yogurt Sauce
  • 1 cup Greek yogurt
  • 1/4 cup fresh mint finely chopped
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1/2 tsp salt
Sandwich Assembly
  • 4 pieces pita bread or flatbreads
  • 1 cup mixed greens
  • 1 medium tomato sliced
  • 1 small cucumber sliced

Method
 

Prepare the Kofta
  1. In a mixing bowl, combine ground beef, grated onion, minced garlic, cumin, coriander, cinnamon, salt, black pepper, and parsley. Mix until well combined.
  2. Form the mixture into elongated patties or mold onto skewers.
  3. Preheat the grill over medium-high heat and brush with olive oil.
  4. Grill the kofta for about 10-12 minutes, turning occasionally, until cooked through.
Make the Mint Yogurt Sauce
  1. In a small bowl, mix together Greek yogurt, chopped mint, lemon juice, minced garlic, and salt until smooth.
Assemble the Sandwich
  1. Warm the pita bread on the grill for a minute.
  2. Spread a generous amount of mint yogurt sauce on each pita.
  3. Add grilled kofta, mixed greens, tomato slices, and cucumber slices.
  4. Fold the pita and serve immediately.
