Ingredients
  

Pie Crust
  • 1 package store-bought pie crust or homemade if preferred
Filling
  • 1 cup blueberries fresh or frozen
  • 1/2 cup lemon curd store-bought or homemade
  • 1 tablespoon sugar optional, adjust based on sweetness of blueberries
Topping
  • 1 egg egg wash beaten egg for brushing
  • 1 tablespoon sugar for sprinkling on top

Method
 

Prepare the Filling
  1. In a mixing bowl, combine the blueberries, lemon curd, and sugar. Mix gently until combined.
Prepare the Pie Crust
  1. Preheat the oven to 375°F (190°C). Roll out the pie crust on a lightly floured surface.
  2. Cut the dough into circles using a cookie cutter or a glass, about 4 inches in diameter.
Assemble the Hand Pies
  1. Place a tablespoon of the blueberry lemon filling in the center of half of the circles.
  2. Moisten the edges of the circles with water, then place another circle on top and press to seal. Use a fork to crimp the edges.
Bake the Hand Pies
  1. Place the hand pies on a baking sheet lined with parchment paper. Brush the tops with the egg wash and sprinkle with sugar.
  2. Bake for 20-25 minutes or until golden brown.
Cool and Serve
  1. Remove from the oven and let cool slightly before serving. Enjoy warm or at room temperature.

Notes

These hand pies can be made ahead of time and frozen before baking. Just bake them straight from the freezer, adding a few extra minutes to the baking time.
