Ingredients
  

Rice and Eggs
  • 2 cups cooked rice preferably day-old
  • 2 large eggs beaten
Vegetables
  • 1 cup peas fresh or frozen
  • 1 cup carrots diced
  • 1 cup green onions sliced
Sauces and Seasonings
  • 3 tablespoons soy sauce or to taste
  • 1 tablespoon sesame oil
  • 1 teaspoon salt or to taste
  • 1 teaspoon pepper or to taste

Method
 

Cooking the Eggs
  1. Heat a wok over medium heat and add a bit of oil. Scramble the beaten eggs until fully cooked, then remove and set aside.
Stir-Frying the Vegetables
  1. In the same wok, add a little more oil and stir-fry the peas, carrots, and green onions until tender.
Combining Ingredients
  1. Add the cooked rice to the wok, mixing it with the vegetables. Pour in the soy sauce, sesame oil, salt, and pepper, stirring well to combine.
Finishing Touches
  1. Finally, add the scrambled eggs back into the wok, mixing everything together until heated through. Serve hot.
