Ingredients
  

Pastry Crust
  • 1 sheet Puff pastry thawed
Filling
  • 2 medium Red onions sliced
  • 2 tablespoons Olive oil
  • 1 teaspoon Sugar
  • 1 teaspoon Balsamic vinegar
  • 1 cup Goat cheese crumbled
  • 2 tablespoons Fresh thyme chopped

Method
 

Prepare the Pastry
  1. Preheat the oven to 400°F (200°C). Roll out the puff pastry and fit it into a tart pan. Prick the bottom with a fork and set aside.
Caramelize the Onions
  1. In a skillet, heat olive oil over medium heat. Add sliced red onions and sugar, cooking until the onions are soft and caramelized, about 15-20 minutes.
  2. Stir in balsamic vinegar, thyme, salt, and pepper. Cook for an additional 2 minutes.
Assemble and Bake
  1. Spread the caramelized onion mixture evenly over the pastry. Top with crumbled goat cheese.
  2. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown.
Serve
  1. Allow to cool slightly before slicing. Serve warm or at room temperature.
