Ingredients
  

Chicken and Base Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans drained and rinsed
  • 1 can kidney beans drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 cup corn frozen or canned
Spices and Seasonings
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper optional for heat

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the black beans, kidney beans, diced tomatoes, chicken broth, and corn on top of the chicken.
  3. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  4. Sprinkle the spice mixture over the ingredients in the crockpot.
Cooking
  1. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  2. Once cooked, shred the chicken with two forks and stir to combine all ingredients.
Serving
  1. Serve hot, garnished with your choice of toppings such as cheese, sour cream, or cilantro.
