Method
Prepare the Peppers
- Preheat the oven to 350°F (175°C). Roast the poblano peppers over an open flame or in the oven until charred, then peel and remove seeds.
Mix the Egg Mixture
- In a mixing bowl, whisk together the eggs, milk, baking powder, salt, and black pepper until well combined.
Assemble the Casserole
- In a greased 9x13 inch baking dish, layer half of the roasted peppers, followed by half of the Monterey Jack and cheddar cheese. Pour half of the egg mixture over the top. Repeat the layers with the remaining ingredients.
Bake
- Bake in the preheated oven for 30-35 minutes, or until the casserole is set and golden brown on top.
Serve
- Allow to cool slightly before slicing. Serve warm with sour cream and chopped cilantro on top.
