Ingredients
  

Base Ingredients
  • 2 medium ripe avocados peeled and pitted
  • 1 large cucumber peeled and chopped
  • 2 cups vegetable broth chilled
  • 1 cup Greek yogurt for creaminess
  • 2 tablespoons lime juice freshly squeezed
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 1/4 cup chopped fresh cilantro for garnish
  • 1/2 medium cucumber sliced for garnish
  • 1 tablespoon lime juice for garnish

Method
 

Prepare the Soup
  1. In a blender, combine the avocados, chopped cucumber, vegetable broth, Greek yogurt, lime juice, minced garlic, salt, and black pepper.
  2. Blend until smooth and creamy, adjusting seasoning if necessary.
  3. Transfer the soup to a mixing bowl and refrigerate for at least 30 minutes to chill.
Serve
  1. Ladle the chilled soup into bowls.
  2. Garnish with chopped cilantro, cucumber slices, and a drizzle of lime juice.
  3. Serve immediately and enjoy!
