Ingredients
  

Orange Peel
  • 2 large oranges zested and peeled
  • 1 cup granulated sugar for candying
  • 1 cup water for candying
Chocolate Coating
  • 8 oz dark chocolate chopped
  • 1 tbsp coconut oil optional, for smoothness

Method
 

Prepare the Orange Peel
  1. Zest the oranges and then peel them, removing as much of the white pith as possible.
  2. Cut the orange peel into strips about 1/2 inch wide.
  3. In a saucepan, combine the water and sugar, and bring to a boil.
  4. Add the orange peel strips to the boiling syrup and reduce heat to a simmer.
  5. Simmer for about 20-30 minutes until the peels are translucent.
  6. Remove from heat and let the peels cool in the syrup for an additional 30 minutes.
  7. Drain the peels and place them on a parchment-lined baking sheet to dry for a few hours or overnight.
Chocolate Coating
  1. Melt the dark chocolate and coconut oil in a double boiler over simmering water, stirring until smooth.
  2. Dip each piece of candied orange peel into the melted chocolate, ensuring it is fully coated.
  3. Place the chocolate-dipped peels back on the parchment-lined baking sheet.
  4. Refrigerate for about 30 minutes until the chocolate is set.
