Prepare the Orange Peel
- Zest the oranges and then peel them, removing as much of the white pith as possible.
- Cut the orange peel into strips about 1/2 inch wide.
- In a saucepan, combine the water and sugar, and bring to a boil.
- Add the orange peel strips to the boiling syrup and reduce heat to a simmer.
- Simmer for about 20-30 minutes until the peels are translucent.
- Remove from heat and let the peels cool in the syrup for an additional 30 minutes.
- Drain the peels and place them on a parchment-lined baking sheet to dry for a few hours or overnight.
Chocolate Coating
- Melt the dark chocolate and coconut oil in a double boiler over simmering water, stirring until smooth.
- Dip each piece of candied orange peel into the melted chocolate, ensuring it is fully coated.
- Place the chocolate-dipped peels back on the parchment-lined baking sheet.
- Refrigerate for about 30 minutes until the chocolate is set.
