Ingredients
  

Filling
  • 4 cups fresh rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine chopped rhubarb, sugar, flour, vanilla extract, and cinnamon. Mix well and set aside.
Make the Topping
  1. In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
Assemble and Bake
  1. Pour the rhubarb mixture into a greased baking dish. Drop spoonfuls of the topping over the rhubarb. Bake for 30-35 minutes or until the topping is golden brown.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.
