Ingredients
  

Potatoes
  • 2 pounds Russet potatoes peeled and cubed
Vegetables
  • 1 cup Kale finely chopped
  • 1 cup Green onions sliced
Dairy
  • 1/2 cup Butter unsalted
  • 1/2 cup Milk or cream
Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper

Method
 

Prepare the Potatoes
  1. Place the peeled and cubed potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil and cook until tender, about 20 minutes.
Cook the Greens
  1. In the last 5 minutes of cooking the potatoes, add the chopped kale to the pot to blanch.
Mash the Potatoes
  1. Drain the potatoes and kale in a colander. Return them to the pot and add butter, milk, salt, and pepper. Mash until smooth and creamy.
Add Green Onions
  1. Fold in the sliced green onions and mix well. Adjust seasoning to taste.
Serve
  1. Serve hot as a side dish, garnished with additional butter if desired.
