  • 2 cups corned beef diced
  • 2 cups Yukon Gold potatoes diced
  • 1 medium onion diced
  • 1 cup bell pepper diced
  • 2 cloves garlic minced
For the Seasoning
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly cracked
  • 1 teaspoon paprika
For Serving (optional)
  • 2 eggs fried or poached on top
  • to taste hot sauce

Method

Preparation
  1. Start by dicing your corned beef, potatoes, and onions into small, even pieces.
Cooking Potatoes
  1. In a skillet over medium heat, melt some butter and add your diced potatoes. Sauté them until they are tender and golden brown, about 10-15 minutes.
Adding Onions
  1. Once the potatoes are cooked, stir in the diced onions. Cook for an additional 5 minutes until the onions soften and become translucent.
Incorporating Corned Beef
  1. Gently fold in the diced corned beef with the potato and onion mixture. Let it cook undisturbed for 5-7 minutes to achieve a crispy golden crust on the bottom.
Flipping and Finishing
  1. Carefully flip sections of the hash to cook evenly, allowing everything to get nice and crispy. Cook for another 5 minutes until heated through and perfectly browned.
