  • 1 lb corned beef chopped
  • 2 medium potatoes Yukon Gold, cubed
  • 1 medium onion diced
  • 1 medium bell pepper diced
  • 2 cloves garlic minced
For the Seasoning
  • 1 pinch black pepper
  • 2 tbsp Worcestershire sauce
  • 1 tsp paprika smoked

Method
 

Preparation
  1. Gather ingredients: corned beef, potatoes, onions, and bell peppers.
  2. Dice your onions and bell peppers into bite-sized pieces, and chop the potatoes into small cubes.
Cooking
  1. Heat a large skillet over medium heat and add a splash of oil.
  2. Add the onions and bell peppers to the hot skillet, stirring occasionally until they soften and become fragrant—about 5 minutes.
  3. Toss in the cubed potatoes, seasoning with salt and pepper. Cook for approximately 10 minutes, stirring until the potatoes are tender and lightly golden.
  4. Gently fold in the chopped corned beef, breaking it up as you go along. Cook everything together for another 5-7 minutes until heated through.
  5. Serve your corned beef skillet hot from the pan, garnished with fresh herbs if desired.
