Sauce Ingredients
  • 1 cup Cottage Cheese Low-fat or regular
  • 1/2 cup Milk Whole or low-fat
  • 1/2 cup Parmesan Cheese Grated
  • 2 cloves Garlic Minced
  • 1/4 teaspoon Nutmeg Ground
Pasta Ingredients
  • 12 ounces Pasta Fettuccine or your choice
  • 2 cups Fresh Vegetables Such as asparagus, peas, or spinach

Method
 

Prepare the Pasta
  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
Make the Sauce
  1. In a blender, combine cottage cheese, milk, Parmesan cheese, minced garlic, nutmeg, salt, and black pepper. Blend until smooth and creamy.
  2. Transfer the sauce to a saucepan and heat over medium heat, stirring occasionally until warmed through.
Combine and Serve
  1. Add the cooked pasta and fresh vegetables to the sauce. Toss to combine and heat for an additional 2-3 minutes.
  2. Serve immediately, garnished with extra Parmesan cheese if desired.
