Crockpot Lasagna with Ricotta

Ingredients
  

Lasagna Layers
  • 9 sheets lasagna noodles no-boil
Cheese Mixture
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese plus more for topping
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Sauce
  • 24 oz marinara sauce store-bought or homemade
  • 1 cup water

Method
 

Prepare the Cheese Mixture
  1. In a bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, egg, basil, oregano, salt, and pepper. Mix until well combined.
Layer the Ingredients
  1. Spread a thin layer of marinara sauce at the bottom of the crockpot.
  2. Place 3 lasagna noodles on top of the sauce.
  3. Spread half of the cheese mixture over the noodles.
  4. Add another layer of marinara sauce, followed by 3 more noodles, the remaining cheese mixture, and another layer of sauce.
  5. Top with the last 3 noodles and the remaining marinara sauce. Pour water around the edges of the crockpot.
Cook
  1. Cover and cook on low for 6 hours or until the noodles are tender.
  2. In the last 30 minutes of cooking, sprinkle additional mozzarella cheese on top and cover until melted.
Serve
  1. Allow the lasagna to cool for a few minutes before slicing and serving.

Notes

For best results, let the lasagna sit for 10 minutes before serving to allow it to set.
