Eggplant Parmesan

Ingredients
  

Eggplant
  • 2 medium Eggplants sliced into 1/4 inch rounds
Breading
  • 1 cup All-purpose flour
  • 2 large Eggs beaten
  • 1 cup Breadcrumbs preferably Italian seasoned
Sauce and Cheese
  • 3 cups Marinara sauce store-bought or homemade
  • 2 cups Mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • 1 tablespoon Olive oil for frying
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil

Method
 

Prepare the Eggplant
  1. Preheat the oven to 375°F (190°C). Slice the eggplants and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  2. Rinse the eggplant slices and pat dry with paper towels.
Bread the Eggplant
  1. Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls.
  2. Dip each eggplant slice in flour, then in egg, and finally coat with breadcrumbs.
Fry the Eggplant
  1. Heat olive oil in a frying pan over medium heat. Fry the breaded eggplant slices until golden brown on both sides, about 3-4 minutes per side.
  2. Drain on paper towels to remove excess oil.
Assemble the Dish
  1. In a baking dish, spread a layer of marinara sauce. Add a layer of fried eggplant, followed by mozzarella and parmesan cheese. Repeat layers, finishing with cheese on top.
Bake
  1. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.
  2. Let cool for 10 minutes before serving.
