Ingredients
  

Falafel
  • 1 cup dried chickpeas soaked overnight
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 bunch fresh parsley chopped
  • 1 bunch fresh cilantro chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon baking powder
Tahini Sauce
  • 1/2 cup tahini
  • 1/4 cup water adjust for consistency
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
Pita and Vegetables
  • 4 pieces pita bread
  • 1 cup lettuce shredded
  • 1 medium tomato sliced
  • 1 medium cucumber sliced
  • 1/4 cup red onion sliced

Method
 

Prepare the Falafel
  1. Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, and salt. Pulse until a coarse mixture forms.
  2. Form the mixture into small balls or patties.
  3. Heat oil in a frying pan over medium heat. Fry the falafel until golden brown on all sides, about 3-4 minutes per side. Drain on paper towels.
Make the Tahini Sauce
  1. In a mixing bowl, whisk together tahini, water, lemon juice, garlic, and salt until smooth. Adjust water for desired consistency.
Assemble the Sandwich
  1. Warm the pita bread in a dry pan or oven. Fill each pita with lettuce, tomato, cucumber, red onion, and several falafel balls.
  2. Drizzle with tahini sauce and serve immediately.
