Ingredients
  

Salad Base
  • 1 cup farro rinsed and drained
  • 2 cups water for cooking farro
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Cook Farro
  1. In a large pot, bring water to a boil. Add the rinsed farro and reduce to a simmer. Cook for about 25-30 minutes until tender.
Prepare Vegetables
  1. While the farro is cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
Make Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper.
Combine Salad
  1. Once the farro is cooked, drain any excess water and let it cool slightly. In a large bowl, combine farro, chopped vegetables, and dressing. Toss to combine.
Serve
  1. Serve the salad chilled or at room temperature. Garnish with additional parsley if desired.
