Ingredients
  

Brisket
  • 3 pounds beef brisket trimmed
  • 2 tablespoons smoke rub store-bought or homemade
Taco Assembly
  • 8 small corn tortillas warmed
  • 1 cup fresh cilantro chopped
  • 1 cup onion diced
  • 1 cup salsa your choice
  • 1 cup lime wedges

Method
 

Prepare the Brisket
  1. Preheat the smoker to 225°F (107°C).
  2. Rub the brisket generously with the smoke rub, ensuring it is evenly coated.
  3. Place the brisket in the smoker and smoke for about 6 hours, or until it reaches an internal temperature of 195°F (90°C).
  4. Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.
Assemble the Tacos
  1. Slice the smoked brisket against the grain into thin strips.
  2. Warm the corn tortillas on the grill for a few seconds on each side.
  3. Fill each tortilla with sliced brisket, then top with chopped cilantro, diced onion, and salsa.
  4. Serve with lime wedges on the side.
