- Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.
Assemble the Tacos
- Slice the smoked brisket against the grain into thin strips.
- Warm the corn tortillas on the grill for a few seconds on each side.
- Fill each tortilla with sliced brisket, then top with chopped cilantro, diced onion, and salsa.
- Serve with lime wedges on the side.
