Ingredients
  

Soup Base
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh peas or frozen peas
  • 4 cups vegetable broth
  • 1 cup fresh mint leaves for garnish

Method
 

Cooking the Soup
  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the fresh peas and vegetable broth. Bring to a boil, then reduce heat and simmer for about 15 minutes until peas are tender.
  4. Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
  5. Season with salt and black pepper to taste. Serve hot, garnished with fresh mint leaves.
