Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1 cup Greek yogurt plain or vanilla
  • 1 large egg
  • 1/2 cup milk or almond milk
  • 1 tsp vanilla extract
  • 2 tbsp melted butter or coconut oil

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the wet ingredients: Greek yogurt, egg, milk, vanilla extract, and melted butter. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
Cook the Pancakes
  1. Heat a griddle or frying pan over medium heat and lightly grease it with butter or oil.
  2. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  3. Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
  4. Repeat with the remaining batter, adjusting the heat as necessary.
Serve
  1. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
