Method
Prepare the Batter
- In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the wet ingredients: Greek yogurt, egg, milk, vanilla extract, and melted butter. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
Cook the Pancakes
- Heat a griddle or frying pan over medium heat and lightly grease it with butter or oil.
- Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through.
- Repeat with the remaining batter, adjusting the heat as necessary.
Serve
- Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
